                      Penny’s Halibut Olympia

2 pounds fresh halibut
½ white or yellow onion sliced thin
¼ cup lemon juice
1 tsp dried dill
½ pkg Ranch dressing mix
1 cup sour cream
1 cup mayonnaise
¾ cup shredded cheddar cheese

Preheat oven to 375

Rinse halibut in cool water and pat dry then place in baking pan in a single layer and pour lemon juice over halibut.  Once halibut is fully drenched with lemon juice, drain off remaining liquid and sprinkle dill over halibut then layer sliced onions on top. 

Mix sour cream, mayonnaise and ranch dressing together then spread over halibut and sprinkle with cheese.

Bake for about 40 minutes (more or less depending upon thickness of halibut).

Halibut is done when you cut into the middle and the fish is just slightly translucent but has begun to whiten and flake easily.

                 Penny’s Salmon Spread

One pint canned or jarred salmon or 2 cups fresh cooked salmon
4 oz cream cheese (softened in the microwave)
½ cup mayonnaise
¼ cup sweet pickle relish
2 dashes Tobasco sauce

Mix all ingredients together in a bowl and chill or serve immediately on bread, crackers or cucumber rounds.
